Chocolate Muffins - Without Eggs!

Last night, I really wanted to make some sort of breakfasty item for a friend who was coming over the next morning to help put flooring in for the downstairs apartment. The problem: I was out of eggs and did not feel like running to the store at 8:00pm at night. I searched diligently through all my recipes, but could not find at least one muffin or coffeecake recipe without eggs! What was I supposed to do?

Then I had a thought. Vegans do not eat eggs! So I scoured the internet for a vegan muffin recipe and found one! The results? Not too bad! A little blander tasting, but the texture was light and fluffy and the muffin was quite moist. Look below for the recipe if you want to try this eggless muffin the next time you run out eggs!INGREDIENTS:

All-purpose flour
- 2 cups
Sugar - 1 cup
Unsweetened cocoa powder - 1/2 cup
Vegetable oil - 1/2 cup and a little more
Water - 1 cup
Milk at room temperature - 1/2 cup (If you want this recipe to be all vegan, use soy milk)
Baking powder - 1 tbsp
Vanilla extract - 1 tsp
Salt - a generous pinch

1. In a large bowl, mix dry ingredients together - flour, sugar, cocoa powder, powder and salt.

2. Next, add oil, water, milk, and vanilla and mix thoroughly, churning the batter in one direction.

3. Pour into muffin/cake pan and bake in a pre-heated oven at at 350 degrees F (175 degrees C) for about 25 mins or until a toothpick inserted in center comes out clean.

4. Cool on wire racks.
