Fresh Fruit Salad

This is my absolute favorite fruit salad recipe. I recently made this salad as a side for dinner, and thought I would share with my readers so you could enjoy this sweet dish too! The flavors are so refreshing, especially in the heat of summer!

Fresh Fruit Salad
 Yield: 6 servings

2 medium red apples, cut into chunks
2 medium firm bananas, cut into slices
1/2 cup green grapes
1 can (8 oz.) pineapple chunks, drained
1/4 cup sugar
1 tbsp. cornstarch
1/2 cup water
3 tbsp. orange juice
4 1/2 tsp. lemon juice

In a bowl, combine the apples, bananas, grapes, and pineapple; set aside. In a small saucepan, combine sugar and cornstarch. Add the water, orange juice and lemon juice; stir until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Pour over fruit; toss gently. Cover and refrigerate until serving.


One of the great things about this salad, is that you can eat it a day later for leftovers and it still tastes good! The orange and lemon juice preserve the fruit, so the salad does not go bad quite as fast.
